Campfire "Hobos" are Always a Hit!

If you’ve never tried a campfire “hobo”, you’re in for a treat!

These tasty campfire meals are easy to put together, nutritious and scrumptious---plus there are no dirty dishes!

My sister-in-law first showed me how to make hobos while we were on a family camping trip at Joe Wheeler State Park in Alabama.

The campground in this beautiful park sits right next to the shores of Wheeler Lake, in close proximity to the Tennessee River.

It has long been a favorite camping site for all of our family!

One of the challenging, but fun, things about camping is cooking meals. We are always on the lookout for tasty, easy to prepare recipes and ideas for “camp” meals, and when my sister-in-law introduced hobos---we knew she had come up with a winner.

One of the great things about hobos is that they can be assembled before leaving home, if you have time. Or, you can easily put them together after you reach the campsite. It’s a matter of preference and what works best for you.

The ingredients are simple:

  • Ground beef or chuck
  • Carrots, thinly sliced
  • Potatoes, thinly sliced
  • Onions, thinly sliced
  • Cream of mushroom soup
  • Salt and pepper to taste


The amount of ground beef and other ingredients you will use depends on how many hungry campers you will be feeding. A general rule of thumb is to allow ¼ pound of ground beef, one potato, one carrot, half an onion, and a generous dollop of cream of mushroom soup---about two heaping tablespoons; per person.

These hobos will be cooked and served in foil packets, eliminating the need for dishes, pots or pans!

First make your foil packets. Tear off a good sized sheet of aluminum foil, large enough so that you will be able to completely enclose it and seal the packet around the ground beef and veggies.

Then, pat out your ground beef into large patties of medium thickness. You don’t want to make them too thick, as you want the meat to be well cooked.

Place a ground beef patty into each foil packet, and top with a big dollop of cream of mushroom soup.

Next, layer thinly sliced potatoes, carrots and onions onto the top of the beef patty and mushroom soup. The soup, besides adding a delicious flavor, also helps the veggies stay in place.

Salt and pepper to taste.

Seal the foil packets and place them on a grill over the campfire or charcoal grill to cook. Don’t cook them too close to the fire!

These are done in approximately 30-40 minutes and smell absolutely divine while cooking!

Hobos are a favorite with everyone---young and old alike---and a wonderful no-fuss campfire meal!
